What you see before you took over fourteen months to create and represents some of the best work our brewery has ever produced. From the coal fire iron-branded wood box, to the elegant metallic label work, to the hand-dipped wax tops, the packaging alone involved nearly every one of our staff members. And of course, there is the beer, the glorious beer. Both beers were brewed in October of 2022 where they underwent a primary fermentation process. Once fermentation was complete, they were aged for one year in single-use American Oak rye whiskey barrels procured from our friends at Cutwater Spirits. Following the barrel aging process, the beers were inoculated with a dose of sugar and fresh yeast and were immediately packaged in the bottles you hold before you. The sugar and yeast serve a secondary fermentation (aka bottle conditioning) process within the bottle to produce carbonation naturally. These beers are well suited to be consumed immediately or aged for several years. If you choose to age them, consider storing them upright in a dark, temperature stable environment (ideally between 55 and 60 degrees Fahrenheit). To consume these beers, refrigerate them normally, pour into your favorite glass, and allow the beer to warm up to approximately 50 to 55 degrees Fahrenheit. Tasting Notes: Notes of caramel, toffee, and orange zest on the nose lead to a warming complex alcohol character. Spiced rye, oak, vanilla, and nutmeg linger on the palate.
